The light-medium roast caramelises the beans' natural sugars and highlights their varietal character, while the medium-dark portion builds body and depth. Because decaffeination increases the beans' porosity, the exterior darkens faster than the interior during roasting – so the beans can look darker on the surface while staying lighter inside, a natural characteristic of decaf rather than a sign of a heavier roast.\u003c\/p\u003e\n\u003ch2\u003eThe Sugar Cane Decaf Process\u003c\/h2\u003e\n\u003cp\u003eThis coffee is decaffeinated using natural ethyl acetate (E.A.), a compound derived from the fermentation of sugar cane. The green beans are gently steamed and rinsed to draw out the caffeine, then dried and cooled – a careful process that removes at least 97% of the caffeine while preserving the flavour compounds that give the cup its richness.
