Éthiopie Kaffa Indigène is a wild, fruit-forward single-origin Ethiopian coffee from our Gran Riserva collection, grown in the ancient forests of Kaffa – widely considered the birthplace of coffee itself. Freshly roasted on demand in our Montréal facility using our signature TAG method, it offers naturally fruity, untamed notes over an excellent, full body. It is a coffee with deep roots and a story in every cup, at home as filter or espresso.
Tasting Notes
This is a coffee with a character all its own – naturally fruity, with the slightly wild edge that forest-grown Ethiopian coffees are known for. Bright fruit notes are carried by an excellent, rounded body, making for a cup that is both vivid and satisfying. Complex and expressive, it rewards a careful filter brew.
Origin
Ethiopia is widely considered the birthplace of coffee, and few places carry that heritage like Kaffa. This coffee is grown in the region's deep, wild forests by the Indigenous communities of the Bonga area – long known as the Kaffa people – for whom coffee has been part of daily life and culture for centuries. A small group of growers harvests just once a year, from September to January, hand-picking the ripe cherries and drying the beans on raised beds in the sun.
Roast
Éthiopie Kaffa Indigène is roasted using our TAG method – Torrefazione Artigianale Granito, our artisanal single-origin roast. Drawing on more than four decades of expertise in green-bean selection, roasting, and cupping, the TAG roast fully caramelizes the beans' natural sugars to unlock their richest, most complex flavours. It is a careful, intuitive process, guided by the hand of our Master Roaster to bring out the fullest potential of this rare single-origin coffee.
Brewing
For espresso, use about 1 tbsp (8 g) of coffee per 1 oz (30 ml) of fresh water. For filter or drip coffee, use 1 tbsp (8 g) per 8.5 oz (250 ml) of fresh water.
