The monsooning process rounds out the cup, giving it a rich intensity with very little acidity and a long, satisfying finish. Deep and distinctive, it is a coffee unlike any other – substantial enough to enjoy black or to anchor a milky cup.\u003c\/p\u003e\n\u003ch2\u003eOrigin\u003c\/h2\u003e\n\u003cp\u003eInde Mousson Malabar comes from the Shevaroys hills of southern India, and takes its name from a process born of history. In the age of sail, coffee bound for Europe spent months at sea in warm, humid holds, arriving with its green beans turned pale gold and its flavour mellowed into something full-bodied and smooth. Today that transformation is recreated on purpose: after harvest, the beans are spread in open, monsoon-facing warehouses and left to the seasonal winds and moisture – the source of this coffee's signature depth and smoothness.\u003c\/p\u003e\n\u003ch2\u003eRoast\u003c\/h2\u003e\n\u003cp\u003eRoasted using our TAG method – Torrefazione Artigianale Granito, our artisanal single-origin roast. Drawing on more than four decades of expertise in green-bean selection, roasting, and cupping, the TAG roast fully caramelises the beans' natural sugars to unlock their richest, most complex flavours,
