In the forests of the Indonesian archipelago, wild civets roaming free are drawn to the ripest, sweetest coffee cherries. As the cherries pass through the animal naturally, the beans are transformed by enzymes in a way no other process can replicate. Farmers then carefully gather and clean these beans by hand – a slow, painstaking harvest that makes Kopi Luwak one of the rarest and most expensive coffees on earth.\u003c\/p\u003e\n\u003ch2\u003eRoast\u003c\/h2\u003e\n\u003cp\u003eKopi Luwak is roasted using our TAG method – Torrefazione Artigianale Granito, our artisanal single-origin roast. Drawing on more than four decades of expertise in green-bean selection, roasting, and cupping, the TAG roast fully caramelizes the beans' natural sugars to unlock their richest, most complex flavours.
