Décaféiné canne à sucre is a rich, full-flavoured decaffeinated coffee created for true coffee lovers who want all the taste without the caffeine. Freshly roasted on demand in our Montréal facility, this South American Arabica blend delivers a classic, satisfying cup with a smooth, rounded body. It is naturally decaffeinated using an ethyl acetate process derived from sugar cane – a gentle method that keeps the coffee's character intact – and it is a filter decaf made for lingering over.

Tasting Notes

This is a rich, smooth cup with the classic coffee flavour that decaf drinkers rarely get to enjoy. A full, rounded body carries a mellow, satisfying taste and a clean finish. Comforting and easy to drink, it is an everyday decaf you can reach for any time – morning, evening, or late at night.

Roast

Décaféiné canne à sucre is built from two roast levels: 60% light-medium roast and 40% medium-dark roast. The light-medium roast caramelises the beans' natural sugars and highlights their varietal character, while the medium-dark portion builds body and depth. Because decaffeination increases the beans' porosity, the exterior darkens faster than the interior during roasting – so the beans can look darker on the surface while staying lighter inside, a natural characteristic of decaf rather than a sign of a heavier roast.

The Sugar Cane Decaf Process

This coffee is decaffeinated using natural ethyl acetate (E.A.), a compound derived from the fermentation of sugar cane. The green beans are gently steamed and rinsed to draw out the caffeine, then dried and cooled – a careful process that removes at least 97% of the caffeine while preserving the flavour compounds that give the cup its richness. Because the solvent comes from sugar cane rather than synthetic sources, this method is often called sugar-cane or natural decaffeination.

Brewing

For filter or drip coffee, use about 1 tbsp (8 g) of coffee per 8.5 oz (250 ml) of fresh water. For espresso, use 1 tbsp (8 g) per 1 oz (30 ml) of fresh water.
