Galápagos Islands is an exquisite single-origin coffee from our Gran Riserva collection, grown on San Cristóbal Island in Ecuador's legendary Galápagos archipelago. Freshly roasted on demand in our Montréal facility using our signature TAG method, it offers unparalleled richness, a full body, and a pronounced aroma, with lively fruit acidity and delicate floral and citrus notes. It is a rare and beautiful cup, at home as filter or espresso.

Tasting Notes

Galápagos Islands is a clean, remarkably well-balanced coffee. A rich, full body carries lively fruit acidity, delicate notes of flowers and citrus, and a naturally sweet, layered finish. Aromatic and refined, it is a true delight – a coffee to be savoured slowly.

Origin

Galápagos Islands is produced on San Cristóbal, in one of the most extraordinary places on earth. Here, 100% Arabica beans – mostly Bourbon and Typica – grow in fertile volcanic soils, cooled by the Humboldt Current and wrapped in persistent cloud cover that slows the cherries as they ripen. The coffee is shade-grown and organically cultivated, and it is this rare combination of island, current, and climate that gives the cup its clean balance, bright fruit, and gentle sweetness.

Roast

Galápagos Islands is roasted using our TAG method – Torrefazione Artigianale Granito, our artisanal single-origin roast. Drawing on more than four decades of expertise in green-bean selection, roasting, and cupping, the TAG roast fully caramelises the beans' natural sugars to unlock their richest, most complex flavours. It is a careful, intuitive process, guided by the hand of our Master Roaster to bring out the fullest potential of this exceptional coffee.

Brewing

For espresso, use about 1 tbsp (8 g) of coffee per 1 oz (30 ml) of fresh water. For filter or drip coffee, use 1 tbsp (8 g) per 8.5 oz (250 ml) of fresh water.
