Papouasie-Nouvelle-Guinée is a bold, characterful single-origin coffee from our Gran Riserva collection, grown high in the Wahgi Valley of the Western Highlands. Freshly roasted on demand in our Montréal facility, it has a bewitching aroma, a lively acidity, and distinctive notes of dark chocolate that lead into a crisp, clean finish. It is a remarkable, grade-AA cup, at its best brewed as filter or drip.

Papouasie-Nouvelle-Guinée is prized for its captivating aroma and its bold character. A lively, pleasant acidity is balanced by rich notes of dark chocolate, finishing crisp and clean. Distinctive and full of personality, it is a coffee that rewards a careful filter brew. The profile described here is for our TAG roast.

Origin

Papouasie-Nouvelle-Guinée is grown along a mountain range in the Wahgi Valley, in the Western Highlands. This is one of the oldest agricultural regions on earth, farmed for thousands of years, and today's growers are the descendants of those first farmers, still working the land with knowledge passed down through generations. Their care and the region's fertile volcanic soils produce this exceptional grade-AA coffee, which remains the main livelihood of the highlands.

Roast

TAG (Torrefazione Artigianale Granito) is our suggested roast for single-origins. Drawing on more than four decades of expertise in green-bean selection, roasting, and cupping, our TAG roast fully caramelises the beans' natural sugars to unlock their richest, most complex flavours. It is a careful, intuitive process, guided by the hand of our Master Roaster to bring out the fullest potential of each single-origin coffee.

Brewing

For espresso, use about 1 tbsp (8 g) of coffee per 1 oz (30 ml) of fresh water. For filter coffee, use 1 tbsp (8 g) per 8.5 oz (250 ml) of fresh water.
