Yémen Moka Mattari is a rare, complex single-origin coffee from our Gran Riserva collection – one of the world's most storied coffees, grown by a family that has produced Yemeni Mocha for well over a century. Freshly roasted on demand in our Montréal facility using our signature TAG method, it reveals a lively acidity and deep, complex notes of red wine and dark chocolate. It is a distinctive, characterful cup, at its best brewed as filter or drip.
Tasting Notes
Yémen Moka Mattari is prized for its depth and its wild complexity. A bright, lively acidity opens the cup, giving way to rich notes of red wine and dark chocolate that linger and evolve. Distinctive and unmistakably Yemeni, it is a coffee to be savoured slowly, one thoughtful sip at a time.
Origin
Yémen Moka Mattari comes from Bani Matar, grown by the Alhamdani family – among the oldest producers and exporters of Yemeni Mocha coffee. Their ancestors began planting and trading coffee here as many as 130 years ago, and the family still preserves old Arabic letters exchanged with coffee agents at the historic ports of Mocha and Aden. It is from that port of Mocha – once the world's great coffee trading hub – that the name comes. Grown high on fertile, tree-shaded slopes, this is coffee with roots in the very origins of the coffee trade.
Roast
Yémen Moka Mattari is roasted using our TAG method – Torrefazione Artigianale Granito, our artisanal single-origin roast. Drawing on more than four decades of expertise in green-bean selection, roasting, and cupping, the TAG roast fully caramelises the beans' natural sugars to unlock their richest, most complex flavours. It is a careful, intuitive process, guided by the hand of our Master Roaster to bring out the fullest potential of this exceptional coffee.
Brewing
For filter or drip coffee, use about 1 tbsp (8 g) of coffee per 8.5 oz (250 ml) of fresh water.
